PIZ PIZ - Fondue temporarily
From 26th December, the Swiss national dish in Davos will have a new setting. The guys from miteinander GmbH, who already run the Stall Valär on site, have freshened up the rustic Davoserhof and converted it into the Piz Piz - Temporary Fondue.
Whether in the green parlor or the wild winter garden, fondue will be served at the former Stei's Davoserhof from 26th December. Either cheese fondue in three different variations or Hot Pot aka Fondue Chinoise with a choice of two homemade bouillons, meat and winter vegetables to cook yourself.
For starters, there is a salad bowl to share or sophisticated winter soups. If you want to stick to the diet plan even in winter, order broccoli or Brussels sprouts instead of bread for the cheese fondue, or skip the cheese altogether and enjoy a vegetarian hot pot with friends.
The chef's favourite variation: the Piz Piz cheese fondue, a classic moitié moitié with 50% Gruyère and 50% Fribourg Vacherin, complemented with Piedmontese winter truffles. Accompanied by a side dish with the potential to become a classic: miniature cordonbleus, which are dipped into the hot cheese at the table in a "do it yourself" manner.
If you eat well, you have to drink well. The young sommelière Saskia Eirich recommends the perfect companion for every fondue, many Swiss white wines, but also discoveries for red wine lovers. With the fondue or as a digestif, there is the most extensive selection of cherries in the region.
Interior rich in contrast
The operators of miteinander GmbH have already shown in the Valär stable that they know how to interpret retro in a young way. Now, together with the design agency Pfeffermint, they want to do the same at the Davoserhof. It should be cosy and comfortable. The woollen blanket will lie on the bench in the Stübli - but there will also be lots of British racing green and a wild winter garden with a view of the Jakobshorn.
